This is really simple, tasty soup. It suits anyone who might be veggy, vegan etc…
I heard a few people say you can add ginger at the beginning, or chilli, so go ahead , experiment, this is just a guideline. This is partly nicked from Nigella
You will need to buy:
1 or 2 chopped onions
couple of cloves of crushed/chopped garlic
large butternut squash – chopped up ( or 2 medium ones)
1/2 pint ml of veg/vegan stock (ie marigold boullion) watchout not too salty
1 + 1/2 pints of water
tbs cumin seeds
tbs coriander seed
blender / stove
You will need to do:
crush the cumin + coriander (in pestle or blender)
7 minutes sweat onions in a little oil / add garlic 2 minutes
add everything else
bring to boil and simmer 30 mins
blend in a wizzer
